Ingredients & Quantity

Guacamole

  • 2 large ripe avocados
  • ¼ onion, finely chopped
  • 1 garlic clove, finely grated
  • 1 fresh lime juice
  • 2 tablespoon capers, minced
  • ¼ cup chopped cilantro
  • Salt to taste

Tortillas

  1. 2.5 cups all-purpose flour
  2. 1 tsp salt
  3. 1.5 tsp baking powder
  4. 3 tbsp vegetable oil
  5. 3/4 cup plus 1 tbsp warm water

Prawn filling

  1. 500 grams shrimp, peeled and deveined, tails removed
  2. 1 tablespoon lime juice
  3. Salt to taste
  4. 2 teaspoons paprika powder PUT A BRACKET ALONG THESE THREE ITEMS AND WRITE – ALTERNATIVELY USE THE CAPER BERBERE
  5. 2 teaspoons cumin powder
  6. 1/4 teaspoon cayenne pepper

Taco toppings

  1. 1 onion diced
  2. 2 tomato diced
  3. Capers or caper berries
  4. Cilantro
  5. Sour cream
  6. Grated cheese

How to Prepare

Tortillas

Mix all the dry ingredients in a bowl, then add the oil and water and mix until it forms a dough. Knead the dough for a couple of minutes till it becomes smooth.

Let the dough rest for 10 minutes

Then divide the dough into 16 equal pieces and roll into disk shape till it’s about 2cm thick.

Heat a skillet and the cook the tortilla for 2-3 min on each side or till its cooked.

Prawn

Pat the shrimp dry with paper towels. Toss the shrimp in a small bowl with the spice mix to get it coated.

Heat a drizzle of oil a large skillet over medium high heat. Add the shrimp to the hot pan and sauté for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.

Guacamole

Smash avocados with a fork in a medium bowl until very coarsely mashed. Mix in onion, capers, garlic, lime juice, salt, and ¼ cup cilantro. Taste and add more lime juice, if desired.

Assembly

To assemble the taco, to the tortilla add the Guacamole, prawn, onions, tomato, cilantro, capers, sour cream and grated cheese.

Serve along with lime wedges.
