Fried Rice

Ingredients & Quantity
  • Day Old Cold Rice 2 cups
  • Chopped Ginger Garlic – loads
  • 1 Red Onion Chopped
  • Chopped Bell Peppers
  • Corn 1/4 cup
  • Peas 1/4 cup
  • 1 Blanched Broccoli
  • 5-6 Seekh Kebabs (cooked and cut)
  • Fresh Basil Leaves
  • Coriander Leaves
  • Spring Onion
  • Green Chili (deseeded and sliced into thin strips)
  • Garlic Chips (fry off some garlic in oil)
  • Cold Pressed Sesame Oil

For The Sauce

  • Ishika Farms Kerala Hot Sauce 1.5 tsp
  • Light Soy Sauce 1.5 tbsp
  • Sweet Chili Garlic Sauce 1 tbsp
  • Sandwich Masala 1 tsp
  • Black Pepper
  • Salt

How to Prepare
  1. In a wok or shallow pan, add oil and let it shimmer. Cook over a high flame the entire time.
  2. Add the ginger and garlic. Once they turn pink, add the red onion, corn & peas and cook for 1 minute. Add the bell peppers and cook for another minute.
  3. Now add the specified amount of light soy sauce, sweet chilli garlic sauce & Kerala Hot Sauce and let it caramelize a little.
  4. Add the rice and toss well. Add sandwich masala, black pepper and salt to taste. Add the blanched broccoli & basil and stir-fry.
  5. Now add the cooked kebabs and toss everything together. Let it sit for a minute or two without stirring, then toss it well.
  6. Finish with a dash of sesame oil, garlic chips, basil leaves, coriander leaves and spring onions.
  7. Serve it with some green dip and garlic chilli crisp on top. You can also add a fried egg.
