Fried Rice
Ingredients & Quantity
- Day Old Cold Rice 2 cups
- Chopped Ginger Garlic – loads
- 1 Red Onion Chopped
- Chopped Bell Peppers
- Corn 1/4 cup
- Peas 1/4 cup
- 1 Blanched Broccoli
- 5-6 Seekh Kebabs (cooked and cut)
- Fresh Basil Leaves
- Coriander Leaves
- Spring Onion
- Green Chili (deseeded and sliced into thin strips)
- Garlic Chips (fry off some garlic in oil)
- Cold Pressed Sesame Oil
For The Sauce
- Ishika Farms Kerala Hot Sauce 1.5 tsp
- Light Soy Sauce 1.5 tbsp
- Sweet Chili Garlic Sauce 1 tbsp
- Sandwich Masala 1 tsp
- Black Pepper
- Salt
How to Prepare
- In a wok or shallow pan, add oil and let it shimmer. Cook over a high flame the entire time.
- Add the ginger and garlic. Once they turn pink, add the red onion, corn & peas and cook for 1 minute. Add the bell peppers and cook for another minute.
- Now add the specified amount of light soy sauce, sweet chilli garlic sauce & Kerala Hot Sauce and let it caramelize a little.
- Add the rice and toss well. Add sandwich masala, black pepper and salt to taste. Add the blanched broccoli & basil and stir-fry.
- Now add the cooked kebabs and toss everything together. Let it sit for a minute or two without stirring, then toss it well.
- Finish with a dash of sesame oil, garlic chips, basil leaves, coriander leaves and spring onions.
- Serve it with some green dip and garlic chilli crisp on top. You can also add a fried egg.
