  • Unsalted butter
  • Drain capers

How to Prepare
  1. Leave unsalted butter at room temperature for 1hr
  2. Drain capers from the brine
  3. Toast the capers gently at 120 degree Celsius
  4. when capers are dry enough chop finely and fold in soften butter
  5. Apply on a slice of toasted sourdough bread and your favourite topping to make an open sandwich – tomatoes, grilled vegetables or top with smoked salmon and serve !!
  6. Use the butter to baste meats/ chicken/ fish
